Thanks for your feedback! I am sorry to hear that our coffee did not meet your expectations. We are more than happy to further investigate what might be causing this difference in taste.
In order to do that, we will need some pieces of information from you. Could you please let us know the following information:
1) The barcode code on the bottom of your bag (this is a code used by our Quality Control team to identify the roast characteristics of your coffee bag). See example below:

2) What recipe did you use to brew this coffee?
----------------grinder brand with model number
----------------grind size depending on your grinder: A stepped grinder will have 1,2,3,4,5,6,7,8,9 or one with a macro & micro grind setting will be 9E, 9A, 7A. If it's a step-less grinder, please let us know if the grind size looks like sand, table salt or something coarser like flakes. Photos will be most helpful.
----------------What was the brewing temperature of your water?
----------------For water ratio, recipes can range from a 1:1 ristretto, 1:2 normale, 1:3 lungo, etc...The standard ratio we suggest starting from for our espresso roast is 1:2.05-2.24 or 18 grams of coffee resulting in 37-39 grams of liquid espresso. For our filter roast its 1 gram of freshly ground coffee to 16-17 grams of water. These are starting points and will need to be adjusted based on your own preferences.
3) Which Equipment have you used to brew this coffee?
----------------Espresso machine with brand and model number, Moka Pot, French Press, Chemex, Aeropress...
4) Details about the taste. What was your taste expectation and what taste did you actually experience?
----------------does it taste flat, more sour or burnt?
5) When and where did you purchase your coffee, if possible?
----------------Our online coffee is the freshest straight out of the Roastery as we are roast-to-order. They will have a roast date provided at the bottom of the bag.
----------------For cafes or grocery stores, depending on shipments to other provinces or countries. The sticker will be a expiry/best-before date. It will be dated six months after the roast date.
Once we have all these details, our Quality Control team will investigate it further and we will contact you with their recommendations and solutions.
